Bitter Gourd Egg Fry Recipe | Bitter Gourd Recipe

I would never eat bitter gourd when I was a kid because of its bitter taste. 
But this recipe made me to love, eating bitter gourd. This bitter gourd egg fry is typical Chinese home cooked food. Since I love to eat it a bit spicy, here I have added some spices to the recipe which makes it so delicious. 

If you want to reduce the bitterness you can rub salt and rinse it for 2 times with water else you can add a teaspoon of sugar to it. 

Bitter gourd is packed with bunch of nutritional values. It contains 92 % vitamin c, 40 % vitamin B-6, magnesium, vitamin A etc. It’s not only rich in several important nutrients but also linked to numerous health benefits. 

Bitter gourd helps reduces sugar level in blood, it decreases cholesterol level, may aid weight loss. 

Alright, here comes the list of  ingredients and step by step procedure to make bitter gourd egg fry. 


This bitter gourd egg fry goes well with rice, chapathi and poori. You can also have it for breakfast, or along with rice or as a snack in the evening with bread. 
I always prefer either chapathi or bread with this egg fry.

Ingredients: - 

Bitter gourd – 2 
Mustard       - ½ tsp
Cumin / jeera – ½ tsp 
Onion             - 1 
Green chilli – 1 
Turmeric powder – ¼ tsp 
Cumin powder – ½ tsp 
Chilli powder – ½ tsp 
Coriander powder – 1 tsp 
Egg – 2 
Garlic  
Coriander 
Salt 
Oil

  • Cut the bitter gourd in half (vertically) and remove the seeds in the center



  • Now finely chop the bitter gourd int to smaller pieces


  • In a pan, Add oil , ½ Tsp of Mustrad and ½ Tsp of Jeera




  • Let it splutter


  • Now add chopped Garlic. Fry garlic until it changes golden brown in color


  • Add onion (1) and cook in a medium flame for 5 min




  • Add green chilli and saute till onion changes in color


  • Its time to add all the spices ( ¼ tsp of Turmeric powder , salt , ½ tsp of cumin powder , ½ tsp chilli powder , 1 tsp of coriander powder ) 





  • Sauté the mixture till the raw smell goes off and then add Chopped bitter gourd


  • Stir fry and add water


  • let it cook till the bitter gourds are soft and reduces in size. Once it completely cooked add eggs.


  • Keep stirring and cook until its dry and soft. Finally garnish it with coriander leaves. Coriander leaves adds more flavour to the dish



Serve hot with rice or chapathi



Tips:

  1. Wash the bitter gourd in salt water to reduce the bitterness
  2. You can also add a teaspoon of sugar to reduce the bitterness
  3. Adding spices totally depends upon your choice
  4. DO not leave egg too long in the heat it will over cook. Make sure to switch it off when the eggs are soft
