Sooji / Rava - 1 cup
Sugar - ¾ cup
Beetroot juice - 1.5 cups
Water - 1.5 cups
Cardamom /Elachi - 1 0r 1/8 tsp fo elachi powder
Ghee - 3 tsp
Cashews - 10
Instructions: -
- Firstly, peel the skin of the beetroot and grate it .
- Blend the beetroot along with water, filter and extract the beetroot juice.
Heat 1 tsp of ghee in a pan and dry roast 10 cashews.
Once the canhew turns golden brown keep it aside.
In the same ghee add 1 cup of rava / sooji , roast until it turns aromatic and keep it aside.
In the same pan add 1.5 cups of beetroot juice and 1.5 cups of water & cardamom.
Let it boil for 3-5 mins.
Keeping the flame on low add 1 cup of roasted rava and stir continuously.
Stir till rava absorbs water and make sure there are no lumps formation
Now add ¾ cup of sugar gradually. Quantity of sugar totally depends upon your sugar level. For 1 cup Rava you can add between ¾ to 1 cup of sugar.
Reduce the flame and cook till sugar dissolves.
In another pan heat 2 tsp of ghee .
Add the heated ghee to the rava mixture and make sure the mixture is combined well .
Cook till rava gets cooked
Furthermore add the fried cashews and cook till kesari separates from the pan.
Finally add a pinch of salt, just to increase the taste level.
Now, its time to serve a hot delicious beetroot rava kesari .
You can serve it either as a dessert or along with the breakfast.
- Firstly, add 1 tsp of ghee and dry roast 10 cashews. Fry till it turn golden brown. Now, keep it aside
- Add a cup of rava / sooji. Roast till it turns aromatic and keep it aside
- Add 1.5 cups of beetroot juice & 1.5 cups of water along with cardamom. Let it boil
- Add the roasted rava / sooji. Keep stirring untill water is absorbed.
- Add ¾ cup of sugar gradually and stir well
- Add 2 tbs of hot ghee and cook untill rava/sooji is cooked well.
- Add a pinch of salt and roasted cashew
- Mix well for
